Description

Delicious muffins perfect for breakfast or a snack!

Ingredients

  • ½ cups Butter (soft)
  • 1 cup Sugar
  • 2 whole Eggs
  • 2 teaspoons Vanilla Extract
  • 1-½ cup All-purpose Flour
  • ½ cups Bread Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • ½ teaspoons Salt
  • 1 cup Walnut Pieces
  • 3 whole Medium Bananas, Ripe

Preparation

Preheat the oven to 400ºF. Prepare a muffin pan with baking spray.

In a mixer, combine the butter and sugar until fluffy. Add the eggs and vanilla and beat until fluffy.

In a separate bowl, combine the dry ingredients, including the walnuts. Add the dry ingredients and the walnuts to the mixing bowl, and partially combine.

Add the very ripe bananas and beat on high until the bananas and the rest of the ingredients have been well combined into a smooth batter.

Evenly scoop the muffin batter into the tin.

Bake for 15 minutes at 400ºF.

Just made these, they’re great! Only note is for some reason it took about 20 minutes in the oven before mine were done.

I baked these this afternoon. They were simple and delicious! Hubby and I both enjoyed them. Hopefully they pass the kid test after they wake up from their naps!
