Description

A delicious part of my Mother’s Day treat.

Ingredients

  • FOR THE BREAD:
  • 2 cups Flour
  • ½ cups Sugar
  • 2 teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1 cup Mashed Bananas, Ripened
  • 1 whole Egg
  • ¼ cups Butter, Melted
  • 1 teaspoon Valencia Orange Peel
  • ⅓ cups Orange Juice
  • FOR THE STREUSEL:
  • 2 Tablespoons Butter
  • 2 Tablespoons Sugar
  • ¼ cups Flour
  • 1 teaspoon Valencia Orange Peel

Preparation

Preheat oven to 400 F. Spray the bottom of a 9 x 5 loaf pan with vegetable spray.

For the bread:

In a large bowl, combine 2 cups flour, 1/2 cup sugar, baking powder, baking soda and salt.

In a large mixer bowl combine bananas, egg, 1/4 cup melted butter, 1 teaspoon orange peel and juice. Mix well.

Add dry ingredients into the banana mixture and mix until just combined. Pour into prepared pan.

To prepare streusel:

Combine 2 tablespoons butter, 2 tablespoons sugar, 1/4 cup flour and 1 teaspoon orange peel in a mixing bowl. Mix until blended. Mixture will be crumbly. Sprinkle over batter.

Bake for 32 minutes or until a toothpick inserted into the center of the loaf comes out clean.
