Description

Wake up your bunch with these healthy muffins for breakfast. They are as pretty as a picture and delicious to boot!

Ingredients

  • FOR THE MUFFINS:
  • 2 cups Wheat Flour
  • ⅔ cups Sugar
  • 2 teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 1-½ cup Old Fashioned Oats
  • 1 cup Milk
  • ½ cups Canola Oil
  • 2 whole Eggs
  • 1 teaspoon Vanilla
  • 2 whole Ripe Bananas
  • ½ cups Crushed Walnuts

  • FOR THE TOPPING:
  • 1 teaspoon Unsalted Butter
  • 1 Tablespoon Dark Brown Sugar
  • ⅔ cups Finely Chopped Walnuts

Preparation

Heat oven to 375F and lighty spray a 12-count muffin pan.

For the walnut topping: Combine melted butter, brown sugar, and walnuts and set aside

For the muffins: In a separate large bowl, combine flour, sugar, baking powder and soda, and salt, mix. Stir in oats. Set aside.

In electric mixer on medium speed combine milk, oil, eggs, vanilla, walnuts, and bananas till there are no lumps. Make a well in the flour bowl mixture and add wet ingredients. Stir till just barely combined (don’t over mix or you will make ‘em tough).

Scoop batter evenly into 12 muffin cups and sprinkle with walnut topping. Bake 25 minutes.
