Description

Easy, naturally-sweetened banana date muffins with a sweet peach jam swirl.

Ingredients

  • 2 cups Whole Wheat Pastry Flour
  • 2 teaspoons Baking Powder
  • 2 teaspoons Baking Soda
  • 1 teaspoon Cinnamon
  • 1 pinch Sea Salt
  • 2  Ripe Bananas, Peeled And Mashed
  • ½ cups Extra Virgin Olive Oil
  • ⅔ cups Skim Milk
  • 2 teaspoons Vanilla Extract
  • ⅓ cups Pure Maple Syrup
  • ¼ cups Honey
  • 5  Dates, Pitted And Chopped
  • 4 Tablespoons Peach Jam (low Sugar Variety)

Preparation

Preheat the oven to 400 F. Prepare 12 muffin cups with non-stick cooking spray.

In a large bowl, stir together the flour, baking powder, baking soda, cinnamon, and salt.

In a medium bowl, stir together mashed bananas, extra-virgin olive oil, milk, vanilla, maple syrup, and honey. Stir the wet mixture into the dry mixture until well-combined. Stir in the chopped dates.

Divide the batter evenly between the 12 muffin cups. Drop a dollop of peach jam on top of each muffin, and use a knife to swirl it into the batter.

Bake for 20 minutes, or until a toothpick inserted in a muffin comes out clean.
