Description

These muffins are moist and satisfying with a hint of spice.

Ingredients

  • 2 whole Medium Sized Bananas, Peeled And Mashed
  • 2 whole Eggs
  • ¼ cups Canola Oil
  • 1 teaspoon Vanilla Extract
  • ¼ cups Honey
  • 1 cup Milk
  • ¾ cups Granulated Sugar, Plus 1 Tablespoon For Cinnamon Sugar
  • 2-¼ cups Cake Flour
  • ½ teaspoons Garam Masala
  • 2-¼ teaspoons Baking Powder
  • 1 teaspoon Ground Cinnamon

Preparation

Preheat the oven to 350ºF.

Combine the mashed bananas, eggs, oil, vanilla, honey and milk in a large bowl. Add 3/4 cup of granulated sugar and whisk to combine.

Add the cake flour, garam masala and baking powder and whisk the mixture to get rid of any lumps.

Pour the batter into a greased jumbo muffin pan (my pan makes 6 muffins).

In a small bowl combine the remaining 1 tablespoon of sugar and the cinnamon. Sprinkle the mixture evenly over the tops of the muffins. Bake for 55 minutes, or until a cake tester comes out clean. Enjoy!

Your ingredients list says 3/4 cup sugar plus 1 tablespoon; your instructions reference 1 cup plus 1 tablespoon. Would you fix this?
