Description

The warm flavors of bananas, cinnamon, and vanilla combine with rich chocolate and coconut to create a great take on an old favorite!

Ingredients

  • 2-½ cups All-purpose Flour
  • 1-½ teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • ½ teaspoons Ground Cinnamon
  • ½ cups Baking Cocoa
  • 3 whole Eggs
  • ¾ cups White Sugar
  • 1 teaspoon Vanilla Extract
  • 4 Tablespoons Unsalted Butter, melted
  • 3 whole Very Ripe Bananas
  • ½ cups Whole Fat Greek Yogurt
  • 1 cup Semi-Sweet Chocolate Chips
  • ½ cups Flaked Sweetened Coconut

Preparation

Preheat oven to 350ºF. Line a large 8 1/2″ x 4 1/2″ x 2 3/4″ bread pan with parchment paper. Mix the flour, baking powder, baking soda, salt, cinnamon, and cocoa together in a medium mixing bowl. Make sure there aren’t any clumps.

In a separate large mixing bowl, beat the eggs, sugar, and vanilla together until well combined. Beat in the melted butter gently. Add the bananas and yogurt to the egg mixture and mix.

Combine the dry mixture and the wet mixture, as well as the chocolate chips and coconut flakes. Gently fold until just combined. It’s okay if there are small pockets of flour but don’t over-mix or the bread will come out tough and dense!

Pour the batter into the lined bread pan. Bake for 45 minutes to 1 hour, or until an inserted toothpick comes out of the bread cleanly without any batter stuck to it.
