Description

These muffins taste just like banana bread. Using melted butter makes these muffins quick and easy to make. Great for school lunches or with a cup of coffee.

Ingredients

  • 3 whole Ripe Bananas
  • ¾ cups White Sugar
  • 1 whole Egg
  • ⅓ cups Melted Butter
  • 1-½ cup All-purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • ½ teaspoons Salt
  • ¼ cups Chocolate Chips

Preparation

Mash bananas in a large bowl. Add sugar and lightly beaten egg to the mashed bananas. Using a hand mixer, beat until fluffy.

Add the melted butter and stir by hand.

Stir in the dry ingredients (do not over stir). Batter will look lumpy.

Line muffin pans with large muffin liners. Bake 18–20 minutes at 375ºF.

Note: you can substitute chocolate chips with walnuts.

These were a hit with my husband & I! They had a banana nut bread quality to them, but with a hint of chocolate (& no nuts). They weren’t heavy, but they were satisfying as a breakfast treat!
