Description

Swoon-worthy banana bread, studded with chocolate chips and nuts and bathed with a chocolately glaze. Can it get better than this?

Ingredients

  • FOR THE BREAD:
  • 1-½ cup All-purpose Flour
  • ¾ cups Sugar
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 1 cup Semisweet Chocolate Chips
  • ½ cups Toasted, Chopped Almonds, Or Nuts Of Choice
  • ½ teaspoons Orange Rind
  • 2  Large Eggs
  • 1 stick Unsalted Butter, Melted And Cooled
  • ¼ cups Plain Yogurt
  • 1 teaspoon Vanilla Extract
  • 1-½ cup Mashed Bananas
  • FOR THE CHOCOLATE GLAZE:
  • 1 cup Powdered Sugar
  • 3 Tablespoons Cocoa Powder
  • 3 Tablespoons Milk
  • ½ teaspoons Vanilla Extract

Preparation

For the Banana Chocolate Chip Bread:

Preheat oven to 350 F.

Butter and flour one 9X5-inch loaf pan. Set the pan aside.

Sift flour, sugar, baking powder, baking soda and salt into a large bowl. Put your chocolate chips, nuts and orange rind into the flour mixture, and stir to combine.

Crack the eggs into a medium sized bowl. Using an electric mixer, beat eggs until smooth. Add in butter yogurt and vanilla and blend well. Fold in the bananas. Stir to incorporate.

Next fold the wet mixture into your dry mixture and stir to combine, but don’t over stir.

Spread the batter into the prepared loaf pan. Bake for 50 minutes to an hour, until a toothpick inserted into the center pulls clean.

Cool completely … If you can wait that long. Once cooled, turn bread out onto a rack (it might be a good idea to put a piece of parchment paper under the rack). Now onto the glaze.

For the glaze:

Whisk all of the glaze ingredients together to combine well. Pour over the loaf and let it set.

Or you could set the glaze aside and each time you cut a slice, heat some of the glaze and spoon it over the serving.
