Description

What I love most about this bread is the crumbly, crusty topping. It really gives it something extra. Be sure to share!

Ingredients

  • FOR THE TOPPING:
  • ¼ cups All-purpose Flour
  • 2 Tablespoons Brown Sugar
  • ¼ teaspoons Ground Cinnamon
  • 2 Tablespoons Cold Butter, Sliced
  • _____
  • FOR THE BREAD:
  • 1-¾ cup All-purpose Flour
  • ¾ teaspoons Baking Soda
  • ½ teaspoons Salt
  • ¾ cups Sugar
  • 1-¼ teaspoon Cream Of Tartar
  • 2 whole Eggs, Beaten
  • ½ cups Vegetable Oil
  • 2 whole Bananas, Mashed
  • ½ cups Chopped Walnuts

Preparation

Prepare the topping by combining the flour, sugar and cinnamon. Cut in the butter using a pastry cutter or fork. Continue until mixture is crumbly.

For the bread, combine the flour, baking soda, salt, sugar, and cream of tartar in a large bowl. Make a well in the center of the mix. Combine remaining ingredients, except nuts. Add to the dry mix, stirring until well moistened. Stir in the walnuts.

Pour into a greased loaf pan. Sprinkle on the streusel topping. Bake at 350ºF for 45 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes in the pan before inverting onto a wire rack.

I have since decided to double the topping as well. I actually now coat the bottom and sides of the pan with half of the streusel mix and sprinkle the rest on top. This way it is coated in crunchiness all over!

I thought this was a decent recipe. I liked the streusel topping but I would probably double it.
