Description

This bread is packed with flavor and comes out quite moist. It’s very flexible and can accommodate many changes and additions. It also comes together very quickly and freezes extremely well.

Ingredients

  • 2 cups Whole Wheat Flour
  • 1 cup Quick Cooking Oats (not Instant)
  • ½ cups Granulated Sugar
  • ¾ cups Brown Sugar, Firmly Packed
  • 2 Tablespoons Baking Powder
  • 2 teaspoons Baking Soda
  • 5 whole Medium Well Ripened Bananas, Mashed
  • 1 Tablespoon Vanilla Extract
  • ½ cups Canola Oil
  • ⅓ cups Orange Juice (or Apple Juice)

Preparation

Preheat oven to 350ºF. Generously coat two 9-inch loaf pans with dairy-free cooking spray.

In the bowl of a mixer combine flour, oats, sugars, baking powder, and baking soda. In a separate bowl, combine mashed bananas and vanilla. Pour onto the flour mixture and then add oil and orange juice. Mix on low speed until combined and then increase speed to high for only a few seconds. Use a rubber spatula to scrape the sides and make sure batter is well incorporated.

Pour batter into prepared loaf pans and bake for 40 to 50 minutes or until a toothpick inserted in centre comes out clean. Cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
