Description

A tender and flaky muffin sweetened naturally with banana and applesauce. A breakfast that won’t weigh you down, and you can feel good about eating.

Ingredients

  • 1 cup Oat Bran
  • 1 whole Medium Very Ripe Banana, Peeled And Mashed
  • ¼ cups Applesauce
  • ½ cups Almond Milk
  • 1-½ teaspoon Vanilla Extract
  • 1 cup Old Fashioned Oats, Ground Into Flour
  • 1-½ teaspoon Baking Powder
  • ½ teaspoons Baking Powder
  • 1 teaspoon Cinnamon
  • ¼ teaspoons Salt
  • 1 Tablespoon Melted Butter Or Coconut Oil
  • ¼ cups Maple Syrup
  • ¼ cups Molasses

Preparation

Preheat oven to 350ºF and grease wells of muffin tin.

In a medium bowl, stir together bran, mashed banana, applesauce, milk, and vanilla. Let sit for 10 minutes so bran can soften and absorb some of the liquid.

In a separate bowl, mix together ground oats, baking powder, baking soda, cinnamon, and salt. Stir oat bran mixture into flour mixture. When just combined, add the butter or oil, maple syrup, and molasses. Do not over-mix.

Divide batter between prepared muffin cups and bake for 18–20 minutes. Let sit in the pan for 5–10 minutes to cool. remove and place on wire rack to cool fully.
