Description

A delicious, rich bread equally tasty with chili or toasted the next day with a fried egg. Easily altered based on ingredients you have on hand.

Ingredients

  • 3 cups Unbleached White Flour
  • 1 teaspoon Salt
  • 1 Tablespoon Granulated White Sugar
  • 1 Tablespoon Baking Powder
  • 1 can (12 Oz. Size) Beer, Such As Coors Or Bud, Something Not Too Strong Flavored
  • 1 cup Diced Cheddar Cheese
  • 1 cup Sliced Green Onions (scallions)
  • 1 cup Cooked, Diced Bacon (save The Grease)
  • ½ cups Liquid Bacon Fat (leftover From Cooking Bacon) Or Melted Butter

Preparation

Preheat oven to 350 degrees (F).

Stir together flour, salt, sugar and baking powder with a whisk. Pour in beer, stir to combine. Mix in cheese, scallions and bacon.

Pour 1/4 cup of bacon grease into the bottom of a 9″ x 5″ loaf pan. Scrape the bread batter mixture into prepared pan and the smooth top so it’s fairly even in the pan. Pour remaining 1/4 cup of bacon grease (or melted butter) over the top of the bread.

Place loaf pan on a cookie sheet. Place in oven, bake for 60 minutes or until knife inserted in center comes out clean.

This bread is very dense but it is ultimately DELICIOUS! It is FULL of flavour and we have made it twice already! Thank you for the recipe. This is going in our keeper file. :)
