Description

One little jar of baby food makes this cornbread PERFECT! There is nothing gross about baby food, after all, we feed it to our little ones! Sweet but not too sweet, not caky at all (yuck!), and moist. Mmm.

Ingredients

  • Butter, For The Pan
  • 1 package (8.5 Oz. Box) Jiffy Corn Muffin Mix
  • 1 whole Egg (yummy Brown Eggs Are Best!)
  • 1 jar (4 Oz. Jar) Corn And Sweet Potatoes #2 Baby Food
  • 1 jar Milk (Fill The Baby Food Jar And Shake)

Preparation

Preheat oven to 400F. Butter your small cast iron skillet (or favorite cornbread pan) and stick it in the oven to heat while you are mixing (helps get that yummy brown crust). Combine Jiffy corn muffin mix, egg, baby food, and milk until just moist and free of lumps. Fill heated cast iron skillet with the mix and pop it in the oven. Do not say anything about baby food. Hide the jar. Bake 15-20 minutes until just done. Let cool for a few minutes while everyone plates their food.

With all of the wonderful recipes on here, this is simple enough to fully enjoy the many other new creations you are searching for. Moist, sweet, NOT caky at all. My husband won’t even touch his grandma’s cornbread now. He would rather do without. Hahaha. Sorry, Grandma.

All it needs is a big ol’ cast iron pot of fresh purple hulls and rice. Make-your-belly-hurt good.
