Description

A simple, yummy quick bread for breakfast or snacking. This can be modified in many ways!

Ingredients

  • 3 cups Flour
  • 2 cups Sugar
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 Tablespoon Cinnamon
  • ¼ cups Oil
  • 2 cups Applesauce
  • 1 cup Chopped Nuts (optional)
  • 1 whole Apple, Diced (optional)
  • ½ cups Cinnamon Sugar (optional)

Preparation

Mix together the dry ingredients. Add the wet ingredients, mixing well. Then fold in the apple and nuts if you are using them. Pour into 2 greased loaf pans. If desired, sprinkle cinnamon sugar (liberally) over the top of the bread before baking.

Bake at 350 degrees F for 1 hour and 15 minutes. (Check it a few minutes early.)

Note: This recipe was supposed to be pumpkin bread, but I used unsweetened apple sauce instead of 2 cups pumpkin. I also tossed in a chopped-up apple. A mashed banana would probably be a great alternative as well!

Tried this today …used half the batter as muffins, and half as bread. 20 min. for a standard size muffin, but should NOT have used papers (in my laziness)- they stuck awful to the paper. In my loaf pan it popped right out though! I used less sugar and the texture was still fine. We loved the recipe- a great addition for something good smelling and sweet. Very few ingredients – woohoo;-)

I TRIED THE RECIPE TODAY AND ADDED RAISINS AND GINGER , CLOVES/ AND ALLSPICE. YUMMY!
