Preheat oven to 350ºF. Line a 12-count muffin pan with baking cups.
In a large bowl mix together flours, baking powder, baking soda, cinnamon and sugar. In a separate bowl, mix together applesauce, vegetable oil, egg, egg whites, orange juice and lemon peel. Combine the two together being careful to not overmix. Stir in apples and walnuts.
Evenly scoop the batter into the prepared baking cups. Bake for 20 minutes.
