Description

Think apple, spices, walnuts, and sweet brown sugar baked in the oven.

Ingredients

  • 1 cup Whole Wheat Flour
  • 2 cups Rolled Oats
  • 1 teaspoon Baking Soda
  • ½ teaspoons Baking Powder
  • ½ teaspoons Sea Salt
  • 1 teaspoon Allspice
  • 1 teaspoon Cinnamon
  • ½ cups Unsweetened Applesauce
  • ¼ cups Apple Cider
  • ¼ cups Brown Sugar, Packed
  • 2 whole Egg Whites
  • 2 whole Apples (peeled And Sliced)
  • ½ cups Walnuts, Plus 2 Tablespoons For Garnish (optional)

Preparation

Preheat oven 350ºF. In a bowl combine the flour, oats, baking soda, baking powder, salt, allspice, and cinnamon. Set aside.

In a large mixing bowl, mix the applesauce, cider, brown sugar, and egg whites. Stir this wet mixture into the flour mixture. Fold in chopped apples and mix well until everything is combined. Add in 1/2 cup of walnuts if using.

Pour your bread mixture between a loaf pan that is coated with cooking spray and top with remaining 2 tablespoons of walnuts. Bake for 40-45 minutes or until the bread tests done with a toothpick and springs back to the touch. Cool for about 10 minutes on a wire rack before removing from your pan.
