Description

What makes these muffins is the crispy top and the chunks of apples inside. I used a pair of really floral-scented Honeycrisps to make these, and they were divine.

Ingredients

  • FOR THE STREUSEL:
  • ⅓ cups Rolled Oats
  • 2 Tablespoons Turbinado Sugar
  • 1 Tablespoon Butter, Melted
  • ½ teaspoons Ground Cinnamon
  • FOR THE MUFFINS:
  • 1 cup Rolled Oats
  • 1-½ cup All-purpose Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Ground Cinnamon
  • 1 cup Unsweetened Applesauce
  • ½ cups Milk
  • ½ cups Turbinado Sugar
  • ⅓ cups Peanut Butter, Melted In Microwave
  • 1  Egg, Lightly Beaten
  • 2 whole Apples, Unpeeled And Cut Into 1/4" Chunks

Preparation

Preheat the oven to 400ºF.

For the streusel:
In a small bowl combine the oats, sugar and cinnamon. Add the butter and mix thoroughly. Set aside.

For the muffins:
In a large bowl, combine the oats, flour, powder, soda and cinnamon. In a different bowl, mix together the remaining wet ingredients (except the apple pieces). Add the wet ingredients to the dry and mix thoroghly, just until combined. Then add the apple pieces and mix in completely.

In a muffin tin lined with papers, add batter (cups should be about 3/4 full). Top evenly with streusel mix. Place in the oven and bake for 18-20 minutes, or until golden brown.
