Description

Made in the crockpot!

Ingredients

  • 1 envelope (1/4 Oz. Size) Active Dry Yeast
  • 1 Tablespoon Honey
  • 1-¼ cup Warm Water
  • 1-¼ teaspoon Coarse Salt
  • 3 cups Whole Wheat Pastry Flour, Plus A Few Spoonfuls
  • 2 Tablespoons Ground Flax Seed (optional)
  • 3 whole Medium Sweet Apples, Diced
  • ½ cups Walnuts, Chopped
  • 2 Tablespoons Butter, Melted
  • 1-½ teaspoon Cinnamon
  • 2 Tablespoons Brown Sugar

Preparation

Place yeast, honey and warm water in the bowl of a stand mixer. Whisk to combine. Allow to sit for 15–20 minutes, until mixture has puffed up.

Fit mixer with dough hook. Stir in salt, then mix in flour, ½ cup at a time, with the mixer running on low. Mix in flax seed, if using. Mix on low for 4–5 minutes, until a ball has formed. Dough should be slightly sticky. Mix in diced apple and walnuts until combined.

Place a few spoonfuls of flour on a large piece of parchment paper. Transfer dough to the paper and form a ball. Place a damp cloth over the dough and let rise for about 1 hour or until dough has doubled in size. Transfer dough with the parchment paper into the crock pot. Set on low.

Whisk together melted butter, cinnamon and brown sugar in a liquid measuring cup. Pour mixture over dough and swirl it into the dough with a butter knife. Place the lid on the crock pot and cook on low for 1 to 2 hours, until internal temperature of bread reaches 190-200ºF.
