Description

A healthy muffin full of fresh apples with a hint of cinnamon.

Ingredients

  • 1 cup All-purpose Flour
  • 1 cup White Whole Wheat Flour
  • ½ cups Sugar
  • ½ teaspoons Ground Cinnamon
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 2 Tablespoons Butter, Melted
  • 2 Tablespoons Unsweetened Applesauce
  • 2 whole Eggs
  • 6 ounces, weight Apple Cinnamon Greek Yogurt
  • ¼ cups Non-fat Milk
  • 1 teaspoon Vanilla Extract
  • 1 cup Apples, Peeled, Cored And Diced Into Small Pieces
  • 1 Tablespoon Turbinado Sugar

Preparation

Preheat the oven to 400 F.

Combine flours, sugar, cinnamon, baking powder, baking soda and salt in a large bowl.

In a separate bowl combine the butter, applesauce, eggs, yogurt, milk and vanilla extract. Add the wet ingredients into the flour mixture, stirring just until moist. Gently fold in the apples.

Spoon the batter into 18 muffin cups that you’ve coated with cooking spray. Sprinkle turbinado sugar over the tops of the muffins.

Bake muffins at 400 F for 15-20 minutes, until light golden.

NOTE: This is a thick batter. I used an ice cream scoop to put the batter into the muffin cups and used my fingers to flatten the tops of the batter.
