Description

Moist and delicious. Muffins with carrots, apple, applesauce and muffins. Only 161 calories each.

Ingredients

  • 2 whole Eggs
  • ½ cups Applesauce
  • ¼ cups Vegetable Oil
  • ¼ cups Fat Free Milk
  • 2 teaspoons Vanilla
  • 2 cups Flour
  • 1 cup Brown Sugar, Packed
  • 2 teaspoons Baking Soda
  • 2 teaspoons Ground Cinnamon
  • ½ teaspoons Salt
  • 1-½ cup Carrots, Shredded
  • 1 cup Apple, Peeled And Shredded
  • ½ cups Coconut
  • ¾ cups Sliced Almonds, Divided

Preparation

Preheat oven to 350ºF. Place paper baking cups in muffin pan.

In large mixing bowl, mix eggs, applesauce, oil, milk and vanilla until well-blended.

Add flour, brown sugar, baking soda, cinnamon and salt; stir just until moistened.

Fold in carrots, apple, coconut and 1/2 cup of the almonds.

Divide batter evenly among muffin cups, filling each about 3/4 full. Sprinkle remaining 1/4 cup almonds on top.

Bake 20 minutes or until toothpick inserted in center comes out clean.
