A healthy, low calorie, moist, cinnamon and apple flavored bread chock full of raisins.
Preheat oven to 350 F. Spray 1 large loaf pan or 3 mini loaf pans with cooking spray; set aside.
In a medium bowl, add yogurt, apple butter, sugar, eggs, oil, vanilla extract and cinnamon; mix until well blended.
In a separate bowl add flour, baking powder, baking soda and salt; mix together.
Slowly incorporate the flour mixture into the apple butter mixture; mix until combined. Do not over mix. Fold in raisins.
Spoon batter into the prepared pans.
Bake for 50 minutes to 1 hour for 1 large loaf or 35-40 minutes for 3 mini loaves, or until a wooden pick inserted into center comes out clean. If needed, loosely tent the loaf/loaves with aluminum foil to prevent excessive browning. Cool in pan(s) set on a wire rack 10 minutes; remove from pan to a wire rack to finish cooling.
Nancy is the Coupon Clipping Cook, which means she not only has an astounding number of recipes to share with us (her TK recipe box is busting at the seams!) but she's also got loads of money-saving tips in her blog (she worked at a grocery store for a number of years, so she knows her stuff). She has some pretty amazing creations, like Roasted Garlic Potato Soup and Nutty Coconut Chicken. Go check them out!
Heather is a Texas native and the blogger behind Heather's Dish. She's mom to Weston, wife to Nate, and they live in Little Rock, Arkansas with their two "stubborn and saucy" dogs Bunker and Keira. In her blog, she shares her photographs, random musings (serious and silly alike), and all kinds of scrumptious recipes---and not just evil variations of her favorite mac and cheese. Her enviable TK recipe box is a testament to that. Go see for yourself!
