Description

There is nothing better to me than a warm muffin and a latte! I omitted the oil in the recipe, substituted it with applesauce and it had the perfect consistency.

Ingredients

  • 1 cup Apples, Peeled, Cored And Chopped
  • 1 Tablespoon Sugar
  • 1 Tablespoon Water
  • 1 teaspoon Cinnamon
  • ½ cups Milk
  • ⅓ cups Applesauce
  • 1 whole Egg, Lightly Beaten
  • 1 teaspoon Vanilla
  • 1 cup Bran Morsels (such As Bran Buds)
  • ⅓ cups Packed Brown Sugar
  • 1 Tablespoon Baking Powder
  • 1 teaspoon Cinnamon
  • ¼ teaspoons Salt
  • 1-¼ cup Flour (can Use Whole Wheat)

Preparation

Cook the apples, sugar, water and 1 teaspoon cinnamon in a small saucepan over low heat until apples are softened. This takes approximately 15-20 minutes. Then remove pan from heat.

Preheat oven to 400 F.

Mix milk, applesauce, egg and vanilla in a large bowl. Dump in the bran morsels, mix and let the mixture sit 2 minutes.

Mix in brown sugar, baking powder, cinnamon, salt and flour. Stir until all ingredients are combined. Add cooked apple mixture and stir.

Spoon into 12 prepared muffin tins. Bake at 400 F for 15 minutes.
