Description

I absolutely LOVE muffins but who wants to waste 300 calories on one? These muffins have all of the deliciousness with half the calories of an averge muffin. And no cholesterol!! YAY!! These moist, blueberry-filled, delicious little babies will really suprise you! Perfect for breakfast!

Ingredients

  • 1-½ cup All-purpose Flour
  • ¼ cups White Sugar
  • ¼ cups Brown Sugar
  • ½ teaspoons Salt
  • 2 teaspoons Baking Powder
  • ⅓ cups Extra Virgin Olive Oil
  • ⅓ cups Light Soy Vanilla Milk
  • 2 Tablespoons Prepared Egg Whites Or 1 Egg White
  • 2 Tablespoons Honey
  • 1 cup Blueberries Or More If Needed

Preparation

1. Preheat oven to 400 F. Grease a 12-count muffin pan with an olive oil soaked paper towel or use paper muffin cups.
2. In a large bowl mix the flour, white and brown sugar, salt and baking powder. Set aside.
3. Pour olive oil, milk and egg whites into a small bowl and mix. Then add this into the flour mixture.
4. Add honey.
5. Fold in the cup of blueberries.
6. Fill muffin cups a little more than halfway full.
7. Put muffin pan into the oven and bake for 20 minutes or until done and golden brown.
8. Enjoy!
