Description

Apple cinnamon muffins that make a great breakfast with a cup of coffee, or a yummy desert with some ice cream.

Ingredients

  • FOR THE MUFFINS:
  • 2  Apples
  • 1-½ cup Flour
  • ¾ cups Sugar
  • ½ teaspoons Salt
  • 2 teaspoons Baking Powder
  • 1 teaspoon Ground Cinnamon
  • ⅓ cups Vegetable Oil
  • 1  Egg
  • ⅓ cups Milk
  • FOR THE TOPPING:
  • ½ cups Sugar
  • ⅓ cups Flour
  • ½ cups Butter, Cubed
  • 1-½ teaspoon Ground Cinnamon

Preparation

1. Preheat oven to 400ºF and grease half a dozen muffin cups.
2. Peel, core and chop your two apples and set aside; I suggest using one tart and one sweet apple.
3. Stir together the flour, sugar, salt, baking powder and ground cinnamon.
4. Mix in the oil, egg and milk by hand (I used a hand mixer and the dough kind of stuck inside the mixers).
5. Once this mixture is combined, you can fold or gently stir in your apples.
6. Fill muffin cups to the top and set aside as you mix the topping.
7. For the topping, in a small bowl mix together the sugar, flour, butter and cinnamon with a fork. Once mixed to a crumbly texture, sprinkle over the unbaked muffins.
8. Place muffins in the oven and bake for 25 minutes, or until an inserted toothpick comes out clean.
9. Enjoy!
