Description

Great for breakfast or as a snack or dessert!

Ingredients

  • 3 whole Eggs
  • 1 cup White Sugar
  • ½ cups Dark Brown Sugar
  • ⅓ cups Splenda Blend
  • ½ cups Canola Oil (or Use 1/4 Cup Applesauce And 1/4 Cup Oil)
  • 4 ounces, weight Softened Light Cream Cheese
  • 1 teaspoon Vanilla
  • 2 cups Shredded Zucchini
  • 1 cup White Flour
  • 1 cup Whole Wheat Flour
  • ½ cups Ground Flaxseed
  • 6 Tablespoons Unsweetened Cocoa Powder
  • 1-¼ teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 teaspoon Cinnamon
  • ¾ cups Mini Chocolate Chips (dredge In Flour To Prevent Sinking)
  • ½ cups Chopped Walnuts

Preparation

Preheat oven to 350.

Mix eggs with sugars, add oil and cream cheese and combine thoroughly.

Add vanilla and zucchini.

Mix in dry ingredients completely then add chocolate chips and nuts.

Fill muffin tins (paper lined) 3/4 full and bake 20-22 minutes. Option- bake in loaf pan for 50-55 minutes.

Oops! I guess they won’t be considered zucchini muffins until I tell you the amount of zucchini. I’ve updated the recipe to include the two cups of shredded zucchini. Goes to show that one should never try posting a recipe after 10 pm! Sorry!
