Description

If you’re like me and have no self-control around baked goods, try making this scone recipe for just one person. Highly customizable and insanely delicious!

Ingredients

  • ⅓ cups Flour
  • ½ teaspoons Baking Powder
  • ¼ teaspoons Salt
  • 1 Tablespoon Sugar
  • 1 Tablespoon Cold Butter, Cut Into Small Cubes
  • 1 Tablespoon Dried Cranberries
  • 1 Tablespoon Chopped Walnuts
  • 2-½ Tablespoons Milk

Preparation

Preheat oven to 450 F. It’s good to note that I have a small food processor (I think a 1-cup capacity?) which worked perfectly for this, but you can certainly use your fingers to break up the butter into the flour. Also, if you prefer other mix-ins besides cranberries or walnuts, a good amount of total mix-in goodness is 2 tablespoons.

In a food processor combine the flour, baking powder, salt and sugar. Pulse the butter into the dry ingredients until it breaks up and resembles crumbs. Next add in the mix-ins and milk and pulse until the dough pulls away from the side of the mixer, which should only take a moment.

Carefully pull the dough away from the blade and shape into a circle, patting it to about 1/2 inch in thickness. Bake at 450 F on a Silpat or a piece of parchment paper for 8-10 minutes until golden brown. Let cool slightly before digging in!

Excellent! I removed the sugar and did jalapeno cheddar. The mix was a bit wet, but it came out just fine. I love the portion control. I surely would have eaten more!

I am so guilty of over indulging so this was perfect. I did have to add some extra flour so I would suggest starting with 1 1/2 tlb of milk and adding as needed. I made mine with some blackberries, it was delicious and sweet!
