Description

This is such an easy and quick recipe to make for grab-and-go breakfasts! Don’t let the lack of ingredients fool you. These are always moist and tasty, no matter the version you choose to make.

Ingredients

  • 1 box (about 18 Oz.) Spice Cake Mix (or Devil's Food Cake Mix)
  • 15 ounces, weight Pumpkin
  • ½ cans Water (use The Pumpkin Can To Measure)
  • 1 cup Semi-sweet Chocolate Chips (optional)

Preparation

This recipe can be made as muffins or in a loaf pan, depending on your mood. Also, you can make this with just about any cake mix that strikes your fancy! The added chocolate chips are optional. (I make these for my kids, often, and they love them. I add a little protein powder to the dry mix, sometimes, just to give them a little more oomph.)

1. Mix all ingredients, until moist.

2. Bake muffins according to cake mix package directions.

(If making loaves of bread, bake at 350 degrees for about 40 minutes. Check occasionally to assure the top is not browning too fast. If it is, place a piece of foil over the top, until bread is done. Check for done-ness after 40 minutes. It may need 5 to 10 minutes more in the oven.)

3. Enjoy!
