Description

A from-scratch chili recipe. This is a very thick chili. A fork standup chili, if you will.

Ingredients

  • 1 pound Ground Hamburger
  • 1 whole Large Onion
  • 1 whole Green Pepper
  • 3 cloves Garlic
  • 4 cans (15 Oz. Can) Beans
  • 1 can (16 Oz. Can) Tomato Sauce
  • 1 can (28 Oz. Can) Crushed Tomatoes
  • 4 Tablespoons Ground Cumin
  • 4 Tablespoons Ground Chili
  • 1 teaspoon Mexican Oregano
  • 3-½ Tablespoons Lime Juice
  • 1-½ teaspoon Concentrated Liquid Smoke
  • ¼ teaspoons Marjoram
  • ¼ teaspoons Thyme
  • ½ teaspoons Ground Chipotle (To Taste)

Preparation

Cook and drain hamburger. Add onion (diced) and green pepper (diced) and cook until soft. Add garlic (minced) and cook for 2-3 minutes. In a crock pot or stock pot, add the beans (drained and rinsed), crushed tomatoes, tomato sauce, and remaining ingredients. Add the hamburger/onion/pepper mixture and stir until well blended.

Cook until hot enough to eat, and beans are softened.

Notes:

You can, of course, add as much onion, pepper, and garlic as you want.

I usually use 2 cans of black beans with 1 can of pinto beans and 1 can of kidney beans, but mix and match how you like it.

i’ve never seen liquid smoke in chili before – i’m trying a couple dashes in mine tonight – also put some lime and thyme into it per your recipe :)
