Zesty Mango Salsa with Pita Chips

Description
This is the perfect “backyard” picnic food. Now don’t get me wrong, I am all for packing up and taking food somewhere fun for a picnic, but this is a really wonderful, easy, zesty recipe that is just perfect for that “deck” picnic.
Ingredients
- 1 whole Mango, Peeled, Sliced Into Small Chunks
- 1 Tablespoon Jalapeno Pepper, Seeds And Stems Removed
- 2 Tablespoons Red Pepper, Chopped In Small Pieces
- 2 Tablespoons Green Onion, Chopped In Small Pieces
- 2 Tablespoons Cucumber Chopped Into Small Pieces
- 1 whole Lime, Zest And Juice
Preparation
Mix everything together (except the lime) in a bowl. Zest the lime over the chopped ingredients (one small lime is about 1 tablespoon of zest). Squeeze the lime juice over the chopped up ingredients. Stir to mix.
Eat them with your favorite chips or crackers. I prefer pita chips, but it would be great with tortilla chips too!
