Description

The most delicious appetizer ever!

Ingredients

  • 6 ounces, weight Feta Cheese
  • 2 ounces, weight Cream Cheese, Softened
  • ⅓ cups Olive Oil
  • 2 Tablespoons Lemon Juice
  • ½ teaspoons Salt
  • ¼ teaspoons Pepper
  • 1 whole Baguette, Cut Into Slices
  • 1 cup Oil-packed Sundried Tomatoes, Roughly Chopped
  • 3 Tablespoons Fresh Basil, Roughly Chopped
  • 2 Tablespoons Toasted Pine Nuts

Preparation

Place the feta and cream cheese in the bowl of a blender or food processor. Blend until the cheeses are mixed. Add olive oil, lemon juice, salt and pepper and blend until smooth.

To assemble the crostini, spread each slice of bread with a generous amount of whipped feta. Place sundried tomatoes on top, then sprinkle with basil and pine nuts.
