Description

These nuts are guaranteed to fly out of your snack bowls in record time, and it’s a certainty you’ll be asked for the recipe later. The combination of sweet and spice gives them a one-two punch!

Ingredients

  • 2 cups Whole Almonds
  • 2 cups Pecans
  • 2 cups Cashews
  • 1-½ teaspoon Onion Powder
  • 1-½ teaspoon Chili Powder
  • 1-¼ teaspoon Garlic Powder
  • 1-¼ teaspoon Salt
  • ¾ teaspoons Ground Coriander
  • ¼ teaspoons Ground Cumin
  • ⅛ teaspoons Freshly Ground Black Pepper
  • ⅛ teaspoons Cayenne Pepper
  • ⅓ cups Water
  • ⅓ cups Unbleached Cane Sugar

Preparation

In a large bowl, place the almonds, pecans, and cashews, and toss to combine. In a small bowl, place all of the spices, stir well to combine, and set aside.

In a small saucepan, place the water and sugar, and bring the mixture to a boil to dissolve the sugar and form a simple syrup. Continue to boil the simple syrup to the soft ball stage (240 degrees, use a candy thermometer).

Remove the saucepan from the heat and stir in the spice mixture. Pour the spiced simple syrup over the mixed nuts and toss well to thoroughly coat the nuts with the mixture.

Transfer the mixed nuts to a non-stick cookie sheet and spread them out to form a single layer. Bake at 350 degrees for 10-15 minutes or until nuts are lightly toasted and fragrant.

Remove the cookie sheet from the oven and set nuts aside to cool. Break the nuts into small pieces and store in an airtight container.

I’m back to report about cooking times on this recipe. It won’t let me add to the review.
I added 10 minutes to the baking time… instead of 15 minutes, I initially did 25 minutes and the nuts came out perfect! Great recipe!

Just put these savory nuts in the oven. I followed your recipe exactly and did not have a problem with the simple sugar and spice mixture coating the nuts as shari reported.
The timer has not gone off for the first 15 minutes, but I was thinking that they might need more time in the over.
Will get back to you on that…. but as I was getting ready to wash the bowl… oops… found one nut… DELICIOUS!

I gave these nuts 5 mitts because the flavor is so fantastic, but honestly I had nothing but trouble with the recipe! The small amount of simple syrup cooked to the softball stage with the spices added to it -turned into a hard crumbly mass so quickly that it couldn’t coat the nuts. I tried it again with the same results. THEN…I tried just making a simple syrup and bringing it to a boil, then mixing in the spices and coating the nuts and baking them. Well…it coated the nuts very nicely, but when I took them out of the oven after 15 minutes, they were still kind of stick, but I thought they would crisp up after they cooled. No such luck. So, after about an hour or so, I baked them AGAIN for 15 minutes, and they did crisp up, but if left at room temperature, they get sticky. If you have any suggestions, I would love to hear them.
