Description

Sweet and spicy nachos with a cool mango salsa.

Ingredients

  • 3 whole Boneless, Skinless Chicken Breasts
  • ¾ cups Sweet Chili Sauce
  • 1 package Wontons, Sliced On The Diagonal, 12 Ounce Package
  • Oil, For Frying The Wontons
  • 2 whole Mangoes, Chopped
  • 1 whole Avocado, Chopped
  • ⅓ cups Cilantro, Chopped
  • ½ whole Red Bell Pepper, chopped
  • 8 ounces, weight Monterey Jack Cheese, Grated

Preparation

Heat the oven to 350F.

Place chicken in a baking dish and cover with 1/2 Cup of Sweet Chili Sauce (found in the Asian section of the grocery store). Cover with foil and bake 30 minutes.

While the chicken is cooking, slice the wontons on the diagonal and fry in oil over medium heat. Set aside on paper towels.

Remove the chicken from the oven and shred with two forks. Toss the chicken in a bowl to evenly cover with the sweet chili sauce it was baked with.

Meanwhile, toss together the mangoes, avocados, cilantro and red pepper. Set aside.

Turn the oven to 450F. Place wontons on a cookie sheet and cover with chicken and cheese. Bake until the cheese is bubbly.

Place the chicken wontons on a plate and cover with mango salsa and drizzle with a little more sweet chili sauce. Enjoy!!!
