Description

Now, you have probably found the tortilla roll-up at a party. A typical roll-up loaded with cream cheese and green onions would be my guess, but I wanted to do something fun with the roll-up, surprise my wife and my daughter, and possibly have them be the taste testers for a potential appetizer for this upcoming Thanksgiving.

Ingredients

  • 11 ounces, weight Cream Cheese, Room Temperature
  • 1 teaspoon Grainy Yellow Mustard
  • 2 whole Pickled Jalapeno Rings, Chopped
  • 2 Tablespoons Pickled Jalapeno Juice
  • 3 whole Green Onions, Thinly Sliced
  • ¼ cups Mexican Pickled Carrots, Pickled, Chopped
  • 1 teaspoon Cracked Black Pepper
  • 1 teaspoon Ground Cumin
  • 1 Tablespoon Fresh Cilantro, Chopped
  • ¼ pounds Shaved Turkey Breast, Paper Thin
  • 5 whole Pieces Of Red Leaf Lettuce, Cleaned And Patted Dry
  • 5 whole 7″ Flour Tortillas
  • 5 whole Pieces Of Plastic Wrap

Preparation

Start by adding your ingredients, excluding the turkey, lettuce, and tortillas, into a mixing bowl, and do just what the bowl wants you to do; mix. Get all of the ingredients incorporated.

Next, get your tortillas ready, as well as the turkey, and the clean lettuce.

Ok, let’s go.

Take a tortilla, spread a generous amount of the cream cheese mixture onto the tortilla. Place some thin slices of the turkey, a piece of red leaf lettuce, and roll up, sealing the tortilla. Take enough of the plastic wrap to completely cover the tortilla wrap, and seal tightly.

Repeat with the remaining ingredients.

Place these in the refrigerator, allowing them to firm up. When you are ready to serve, remove the plastic wrap and cut them with a serrated knife, approximately one inch thick, just enough to be a great finger food.

The nice thing about these roll-ups is that they not only have a great richness to them, but they have a nice subtle crunch from the pickled carrots, and a slight heat from the jalapenos. Enjoy.
