Description

Chicken with peanut butter dressing wrapped together with mango and cilantro in a tortilla.

Ingredients

  • 4 whole Boneless, Skinless Chicken Breasts
  • 1 whole Mango
  • 1 cup Arugula (Rocket)
  • 4 whole 8" Tortillas
  • FOR THE MARINADE:
  • 2 Tablespoons Peanut Butter
  • 1 cup Chicken Broth Or Stock
  • 1 Tablespoon Soy Sauce
  • 1 Tablespoon Sesame Oil
  • 2 whole Small Limes, Juiced

Preparation

Cut the chicken into thin strips.

For the marinade, add the peanut butter, chicken broth, soy sauce, and sesame seed oil into a bowl. Next, juice the limes and add the juice into the bowl. Save 1/4 cup of the marinade and pour the rest into a Ziplock bag. Add the chicken into the bag. Allow chicken to marinate for 20 minutes in the fridge.

In the meantime, peel and slice the mangos into thin slices and chop the arugula.

Pull the chicken out of the marinade and put it onto a hot grill pan. Cook until the chicken strips are no longer pink and nicely golden.

Place the tortillas onto a plate and cover them with a damp paper towel. Heat in the microwave for about 30 seconds.

Assemble the tortillas with the chicken, mango and arugula. Drizzle a little of the reserved peanut sauce over the wrap before wrapping it all up and serving.
