Description

A delicious, healthy, and addictive appetizer. People can’t stay out of this dish. So fresh tasting, using a few fresh ingredients with a few canned ingredients. I’ve found Fritos Scoops to be the best chip to use with this dip.

Ingredients

  • 15 ounces, weight Black-eyed Peas, Drained
  • 15 ounces, weight Black Beans, Drained
  • 15 ounces, weight Whole Kernel Corn, Drained
  • 15 ounces, weight Petite Diced Tomatoes, Drained
  • 4 ounces, weight Diced Green Chilies
  • 1 whole Green Pepper, Diced
  • 1 whole Red Onion, Diced
  • 4 cloves Garlic, Minced
  • ⅔ cups Picante Sauce (I Like Medium Heat)
  • 2 Tablespoons Lime Juice
  • 1 teaspoon Chili Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Dehydrated Cilantro
  • Salt To Taste

Preparation

Mix all ingredients together. Cover and chill for at least 2 hours or up to 24 hours. Serve cold or at room temperature with Fritos Scoops.

Yields about 5 to 6 cups.

i love this stuff!!! fresh cilantro is the best and i usually eat this with a spoon. skip the chip!

Delicious! I concur that everyone loves this dish! (The only modification I made was parsley instead of cilantro for us gringos!) But this is delicious.
