Description

These sweet potatoes are a healthy (and tastier) version of the traditional loaded potato skins you find in restaurants. A little blue cheese goes a long way as far as flavor goes. Turkey bacon keeps these potatoes nice and lean. Perfect for the Super Bowl or any time party appetizer. I love mine warm, on top of a fresh mixed green salad.

Ingredients

  • 4 whole Sweet Potatoes (Garnet Yams) Cleaned And Cut Into 1/4 Inch Rounds, Leave Skin On
  • 1 Tablespoon Olive Oil
  • 3 pinches Garlic Salt
  • 3 pinches Cracked Black Pepper
  • 3 pinches Smoked Paprika
  • 3 pinches Dried Thyme
  • 8 ounces, weight Blue Cheese, Crumbled
  • 8 ounces, weight Cooked And Crumbled Bacon - I Like Organic, Nitrate Free Pork Or Turkey Bacon
  • ¼ cups Chives, Snipped For Garnish

Preparation

Preheat oven to 425˚F with rack(s) in the middle. Prepare baking sheet(s) with parchment paper or Silpat. Toss sweet potatoes with olive oil and seasonings. Adjust seasonings to taste preference. Arrange in a single layer on baking sheet(s). Bake for about 25-30 minutes until sweet potatoes are golden brown and softened. Take potatoes out of the oven, put the rack in lower half of the oven and set temperature to low broil.

Top each sweet potato round with blue cheese and bacon crumbles. Broil until the cheese is bubbling and melted. Let cool on baking sheets on racks and top with snipped chives.

Variations:

Change up the seasoning of your sweet potatoes with curry powder, Chinese five spice, chili powder, basil, rosemary, Cajun seasonings or whatever you choose.
If desired, you can replace the blue cheese with your favorite cheese.
