Description

Moist, delicious, healthy granola bars that taste like the holidays!

Ingredients

  • 1 cup Old Fashioned Oats
  • ½ cups Whole Wheat Flour
  • ¼ cups Wheat Germ
  • 2 Tablespoons Milled Flax Seed
  • ¼ cups Brown Sugar
  • ½ teaspoons Salt
  • ½ teaspoons Cinnamon
  • ¼ teaspoons Ground Ginger
  • ⅛ teaspoons Allspice
  • ⅛ teaspoons Freshly-ground Nutmeg
  • ½  Baked Sweet Potato
  • 1  Egg
  • 1 teaspoon Vanilla
  • ¼ cups Honey
  • ¼ cups Applesauce

Preparation

Mix dry ingredients together.

In a separate bowl, mash sweet potato. Then stir in egg and vanilla. Mix well until smooth and lump-free.

Add honey and applesauce to the sweet potato mixture and stir until well combined.

Stir in dry ingredients until well moistened.

Pour into a well greased 8×8 pan, and bake at 350ºF for 25-30 minutes.

Cut into bars immediately out of the oven.

This did not turn out well for me. I didn’t hold together like I thought a regular granola bar would. I have to try again.
