Description

If I was stuck on an Island by myself and I could only bring one thing with me, it would be a huge bag of these sweet ans salty nuts!

All I could say is wow five hundred million times after trying this recipe. Oh my God is this ever addictive and amazing!

Recipe slightly modified from Smitten Kitchen.

Ingredients

  • ⅓ cups Brown Sugar
  • ⅔ cups White Sugar
  • 1 Tablespoon Kosher Salt
  • 1 pinch Cayenne Pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Cinnamon
  • 1 whole Egg White
  • 1 Tablespoon Water
  • 7 ounces, weight Pecans
  • 7 ounces, weight Hazelnuts
  • 3-⅝ ounces, weight Almonds

Preparation

Preheat oven to 300ºF.

Mix sugars, salt, cayenne, paprika and cinnamon, making sure there are no lumps; set aside.

Beat egg white and water until frothy but not stiff. Add nuts, and stir to coat evenly. Sprinkle nuts with sugar mixture and toss until evenly coated.

Spread sugared nuts in a single layer on a cookie sheet fitted with parchment paper. Bake for 30 minutes, stirring occasionally.

Remove from oven and separate nuts as they cool. When completely cool, pour the nuts into a bowl, breaking up any that stick together.

I made these last night and thought they were OK. They are sort of bland and the nuts got soft. Wasn’t expecting that. Was hoping they’d have a little more flavor and not just taste like cinnamon.
