Description

A twist on average hummus. Add in Sun-dried tomatoes and roasted garlic and you’ve got a zingy spread for flatbread that says Mmmm!

Ingredients

  • 1 whole Head Of Garlic
  • 2 teaspoons Olive Oil
  • 2 cans Garbanzo Beans Drained
  • 1 whole Lemon, Zest And Juice
  • 1 teaspoon Salt
  • ¼ teaspoons Cayenne Pepper
  • 4 ounces, weight Jar Sun-dried Tomatoes
  • ¼ cups Olive Oil
  • 1 Tablespoon Fresh Parsley Chopped For Garnish

Preparation

To roast garlic- cut off very top of garlic head. Drizzle olive oil over. Put in square of tin foil and tent. Put in 350º oven for 30-40 minutes or until caramelized.

Squeeze garlic cloves into food processor and add everything except olive oil and parsley. Process for about 45 seconds.

Then begin to drizzle olive oil in until spread is formed. Sprinkle with chopped parsley and serve with flatbread wedges, tortilla chips, cracker or bagel chips.

I have updated the recipe to reduce the sun-dried tomatoes to 4 ounces.

betnix – I updated…I’ll figure out how to do this correctly sometime this century! Also reduce the tomatoes to 4 ounces. I like it better this way!
