Description

Perfect cheesy tomato interior with a golden crispy exterior. Yummy!

Ingredients

  • 24 whole Cherry Tomatoes
  • ½ cups Asiago Cheese, Finely Grated, Divided
  • 4 whole Mild Italian Sausages
  • ½ cups Flour
  • 2 whole Eggs
  • 1 cup Panko Crumbs
  • 1 cup Bread Crumbs
  • Salt And Pepper, to taste
  • Canola Oil, For Frying
  • Salsa, To Serve

Preparation

Cut the top off of the cherry tomatoes and core them. Stuff in a small amount of grated Asiago cheese. Repeat for all of the tomatoes.

Remove the sausage meat from the casing. Pinch off a small amount and flatten it out into a disc. Place the tomato on the disc and wrap the sausage meat around the tomato.

Have 3 dishes ready to roll the meatball in: first one with flour, salt and pepper to taste; second with beaten eggs; and the third with panko, the rest of the asiago cheese, bread crumbs and salt and pepper. Now roll the meatball first in the flour then egg and finishing off in the panko mixture.

Heat 2″ of canola oil in a wok and deep fry to golden brown. Serve with salsa. Yummo!

Was SO excited to make these! My market had a sale on sausage and I got some chicken apple and some hot italian. I only had brie cheese, which is should have left in the fridge until i needed it, but i didn’t. It was kinda goopy and hard to work with. My fault. I had 3 eggs cuz I’m a bit of a sloppy cook and I ran out of that. I should say here that I only used 3 sausages. It was a bit of a tedious job and I wish I had an assembly line. Also, I had the oil waaaaaay too high and the first 6 meatballs were ugly and charred. What a waste. So, to be even more wasteful….I changed the oil and got all the round balls together and let things cool and WOW that next batch was amazing. I wish I added some herbs to the cheese, and again i should have left the cheese in the fridge. Should be no fear of getting a hard cheese for this recipe, does not have to be a soft cheese. But, am thinking if I even had a cream cheese base and a ton of added very small veggies and garlic and herbs that would be the bomb. Of course I would cook that up a bit before I added to the tomato…….Anyway, I digress. Pretty good recipe. Very glad I tried it as I am surprisingly new to meatballs. Will try again! Thanks
