These always get rave reviews. They’re a great combination of sweet, salty, crunchy and creamy.
1. Using a sharp paring knife, cut a slit down one side of each date, from top to bottom. Remove the pit.
2. Using a small spoon, open the date and fill with some goat cheese.
3. Insert an almond in the middle of the cheese.
4. Press date back together.
5. Wrap with prosciutto. (I only use enough prosciutto to go around the date once.)
6. Broil until prosciutto is crispy and cheese is melting.
Notes:
This is a very easy and forgiving recipe. I don’t worry about the quantity of each ingredient; I just buy the smallest container of each. The dates I get usually come in packages of 16. These are rich enough that usually two per person is enough.
I use an assembly line method when preparing.
Bacon can be substituted for prosciutto. Just be sure to broil long enough to fully cook the bacon!
I’ve also left out almonds if I didn’t have them in the pantry.
And I’ve even resorted to using dried dates found in the baking aisle. Use Medjool dates if you can find them.
