Description

Stuffed Italian artichokes. Yum!

Ingredients

  • 4 whole Baby Artichokes
  • ½ cups Breadcrumbs
  • ½ cups Shredded Parmesan Cheese
  • 1 cup Grated Parmesan Cheese
  • 1 whole Small Onion, Diced
  • 1 teaspoon Salt
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Italian Seasoning
  • ½ teaspoons Black Pepper
  • ¼ cups Olive Oil

Preparation

First, prepare the artichokes by cutting off the stems so you have a flat bottom and the artichokes stand up. Then, begin cutting off the pointy tips of all of the leaves on the artichokes.

Put the artichokes in a pot of boiling water and cover the pot. Simmer them for about 10 minutes (for small artichokes) or 15-20 minutes for large ones. You will know when the artichoke is done if a knife can easily slice through the stem that is left or when the leaves pull off easily.

While artichokes are boiling, prepare the stuffing. Combine all of the remaining ingredients into a medium sized bowl.

Once artichokes are finished boiling, remove them from the water and allow them to cool for a few minutes. Then, remove the heart from the center of each artichoke using a spoon. Place them in a baking dish, making sure that they stand up.

Stuff the center and between the leaves with the stuffing. Bake in the oven at 350 degrees F for about 15 minutes.
