A spicy, flavorful alternative to the typical buffalo wings. If you don’t have the Sriracha Hot Sauce and Korean Hot Pepper Paste (normally found at your local Asian market), feel free to substitute your preferred hot sauces.
1.) Mix together all the ingredients for the wings minus the chicken wings themselves.
2.) Add the wings and turn to coat them in the marinade.
3.) Cover and marinate them in the fridge from 1 hour to overnight.
4.) Mix together the ingredients for the glaze. Add water to thin out the mixture as needed until the mixture is the consistency of a thin yogurt, so that it is easily brushed onto the wings.
5.) Grilling instructions…
Set up your grill for indirect cooking and for best results incorporate your preferred wood chips to smoke the wings. Grill the wings on high for 20 minutes (with smoke). Reduce temperature to low and grill for another 20 minutes (without smoke). Be sure to continually turn wings every 5-10 minutes. Finally, glaze both sides of the wings and grill them on high for an additional 5 minutes (with smoke). Serve as is or with your favorite dipping sauce.
