Description

A delicious guilt free dip, perfect for pita crackers, veggies, bread bowls, spread onto sandwiches, or even used as a salad topper.

Ingredients

  • 3 cloves Garlic, Minced
  • ½ cups Diced Green Onions
  • 1 Tablespoon Lemon Juice
  • 1 teaspoon White Wine Vinegar
  • 1 teaspoon Pepper
  • ½ teaspoons Sea Salt
  • 2 cups Nonfat Greek Yogurt
  • ¼ cups Feta Cheese, Nonfat, Crumbled
  • 1 cup Baby Spinach
  • 1 cup Kale, Roughly Chopped
  • ½ cups Red Bell Pepper, Diced
  • ½ cups Water Chestnuts, Chopped

Preparation

In a food processor blend garlic, green onions, lemon juice, vinegar, pepper, and salt. Then add in Greek yogurt. Blend until smooth. Taste and adjust seasonings to your liking.

Add in feta cheese, spinach and kale. Give it a good pulse, just to chop up veggies. Once veggies are the size you’d like, remove the mixture from the food processor. Pour into a medium bowl and combine with red pepper, and water chestnuts. Stir well. Taste again and adjust seasonings if needed.

Enjoy with whole wheat pita crackers, inside of bread bowls, spread onto sandwiches, or topped over salads.

The taste is good but my results were soupy. The yogurt I used was Trader Joe’s nonfat Greek yogurt.
