Description

Spinach and other yumminess. In a ball. Kids love these, even those kids that don’t like spinach. Perfect finger food!

Ingredients

  • 2 boxes (10 Oz. Size) Chopped Frozen Spinach, Defrosted And Squeezed Of Excess Water
  • 5  Eggs, Beaten
  • 1  Onion, finely chopped
  • 1 stick Butter, Melted
  • 1 cup Parmesan Cheese, Grated (I Used Pre-grated Cheese In A Can With Excellent Results)
  • 1 box (about 5 Or 6 Oz. Size) Croutons, Any Flavor

Preparation

Note: make sure you squeeze as much excess water from the spinach out as you can. It makes a difference in the end!

Put spinach in a bowl and break squeezed bits apart. Add beaten eggs, onion, butter, cheese, then croutons. Mix well. Chill mixture for about 30 minutes.

Preheat oven to 350ºF.

Form mixture into walnut-sized balls using your hands or a spoon (I prefer using my hands). Place balls on a cookie sheet and bake for about 15 minutes, until lightly browned. Allow to cool slightly before removing to a plate for serving.

Recipe can be doubled, tripled, quadrupled. Store in the refrigerator if there are any left.

I’m glad you liked them! I love the idea of pairing them with pita and hummus. I am thinking they wouldn’t hold up quite so well in place of meatballs in a sauce, but who knows! I think it’s worth trying :)

Yum! Yum! Made these and served them in pita with hummus and Greek quinoa salad. Delicious and we are not even vegetarian. I think I may save the leftovers and use them as a meatball substitute when I make pasta with red sauce. Do you think they will hold up?
