Description

Spinach and Cheese Squares.

Ingredients

  • 20 ounces, weight Frozen Chopped Spinach
  • 8 ounces, weight Cheddar Cheese
  • 8 ounces, weight Swiss Cheese
  • 4 Tablespoons Butter
  • 2  Eggs
  • 1 cup Milk
  • 1 cup Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt

Preparation

Thaw spinach and squeeze all water out.

Grate cheeses. Melt butter; set aside to cool.

In a large bowl, beat eggs and milk. Sift flour, baking powder and salt into egg mixture and beat gently. Beat in melted butter. Add spinach and cheese and mix well.

Spread into 9 x 11 baking dish. Bake uncovered at 325ºF for 45 minutes. Allow to cool slightly before cutting.
