Description

A spicy and fresh twist on a classic appetizer.

Ingredients

  • 4 ounces, weight Pepper Jack Cheese, Shredded
  • 4 ounces, weight White Cheddar Cheese, Shredded
  • 4 ounces, weight Cream Cheese, Softened
  • ¼ cups Cilantro
  • ¼ cups Carrot, Shredded
  • 1 teaspoon Lime Zest
  • ¼ cups Red Onion Or Shallot, Minced
  • 3 leaves Mint
  • 1 clove Garlic
  • ½ cups Peanuts, Roughly Chopped For Coating

Preparation

In a food processor, add in cheeses and pulse to combine. Add in remaining ingredients, except peanuts, and pulse to combine until nearly smooth. Pour cheese onto a double layer of plastic wrap. Gather all the ends of the twist them together to tighten the cheese mixture into a ball. Place in fridge for 20-30 minutes to begin to set. Once it begins to set, unwrap from plastic and roll into chopped peanuts. Serve immediately or wrap into a new layer of plastic wrap until ready to serve.

Serve with lime sprtized tortilla chips or crackers and additional lime.

Incredibly tasty and super flavorful! I followed the recipe exactly except I added all pepperjack (we like it really spicy) and omitted the peanuts on the outside (because my bf doesn’t like them). I think the peanuts would have added a nice sweetness, I might add a little honey in place of the peanuts next time. Fabulous recipe, thanks so much!
