Preheat oven to 425°F.
Drain and rinse beans. Place between a few sheets of paper towel and gently roll hands back and forth to help dry them. Some of the skin will come off, but that’s okay. Transfer dried beans to a bowl.
Add olive oil, garam masala, brown sugar and stir well to combine.
Place beans on a rimmed baking sheet and spread into even layer. Bake for 30 minutes, tossing after 20 minutes. Chickpeas are done when they are toasted and slightly crispy.
Garnish with chopped curry leaves if desired.
