Description

This recipe is ideal for the person who thinks that they don’t like okra! A quick and easy way to use okra but without any of the slime that can be associated with this vegetable. Great as an appetizer when having an Indian themed dinner. Chat masala can be bought in any Asian shops. I usually buy a brand called Chunky Chat Masala by MDM.

Ingredients

  • 1 quart Vegetable Oil
  • 1 pound Fresh Okra
  • 1 Tablespoon Chat Masala

Preparation

Heat oil in large frying pan. It will be ready when a test piece of okra is dropped in and the oil instantly bubbles around it.

Wash and dry the okra. Make sure you look for fresh okra that is green and not going black or brown.

Slice the tops of each one. Slice each in half lengthwise.

Fry in batches until just starting to brown on the edges.

Drain and sprinkle with chat masala.

Eat while warm and crispy.

I just made this. My husband doesn’t care for my traditional fried okra, but he cleaned his plate in less than five minutes tonight!
