Description

This is the perfect snack to make if you have guests over. Whether you’re making dinner, or just having friends over for drinks, this snack is a great appetizer. I’ve seen recipes use sugar, and a variety of spices however, I like to keep things simple so there aren’t any major distractions. The salt and chili flakes simply elevate the delicious nutty taste.

Ingredients

  • 1 whole Egg White
  • 1 teaspoon Paprika
  • 1 teaspoon Chili Flakes
  • 1 Tablespoon Kosher Salt
  • ½ cups Blanched Almonds
  • 1 cup Unsalted Cashews

Preparation

1. Preheat your oven to 380 F/190 C. Line a rimmed baking tray with baking parchment.

2. In a medium-sized bowl whisk the egg white until frothy. Using an electric whisk, this took just a couple of minutes.

3. Stir in the paprika, chili flakes and half the salt.

4. Add the cashews and almonds and stir to mix well.

5. Spread the mixture onto your baking tray in a single layer, then sprinkle over the remaining salt.

6. Bake for 20 minutes, stirring and breaking up the nuts halfway through. The mixture will be quite sticky so be patient with it. After 20 minutes check to see how they’re doing. They may need a few minutes more to brown off, just make sure they don’t burn.

7. Once done, remove pan from the oven. Let the nuts cool for 15 minutes before serving, using your fingers to break up any clumps.
